Lately I have been finding it difficult to come up with interesting and new dinners during my week days. I have quite intense days at the university and when I come home late the last thing I think of is what to have for dinner. This has of course ended up with some bland and simple food and straight off to bed. This said, a couple of days ago I suddenly found my missing inspiration and popped by the store to see if I could come up an interesting, everyday dinner by just browsing. I decided to base my meal around a chicken breast I had in my freezer to save some money, and here is what I came up with.

- 1 chicken breast
- 1 goats´ cheese, preferably with some herbs. I had one with fines herbes & garlic. (This cheese can be substituted with most soft cheeses, but try to find one with some flavor so it doesn't get too bland)
- 1/2 aubergine
- 1/2 zucchini
- 1/2 red pepper
Directions:
- Preheat the oven to 200 C.
- With a sharp knife, slice a pocket into the chicken breast and fill it with the cheese. Season the chicken with salt and pepper.
- Heat a spoon of olive oil in a frying pan (preferably oven proof), and add the chicken. Cook until golden brown, then turn and fry for about 2 minutes. When this is done, but the chicken (and the pan) into the oven and cook for 15 minutes.
- While the chicken is in the oven, cut up your vegetables into thin slices, put them in a bowl and add 2-3 spoons of olive oil, season with salt and pepper. Put them in a hot pan and cook for 5 minutes or until tender.
- Remove the chicken from the oven, add some goats´ cheese on top and put it back for 5 minutes or until cooked through.
