Great Goats´ Cheese Chicken & Vegetables

Lately I have been finding it difficult to come up with interesting and new dinners during my week days. I have quite intense days at the university and when I come home late the last thing I think of is what to have for dinner. This has of course ended up with some bland and simple food and straight off to bed. This said, a couple of days ago I suddenly found my missing inspiration and popped by the store to see if I could come up an interesting, everyday dinner by just browsing. I decided to base my meal around a chicken breast I had in my freezer to save some money, and here is what I came up with.

For 1 person:

Ingredients:

  • 1 chicken breast
  • 1 goats´ cheese, preferably with some herbs. I had one with fines herbes & garlic. (This cheese can be substituted with most soft cheeses, but try to find one with some flavor so it doesn't get too bland)
  • 1/2 aubergine
  • 1/2 zucchini
  • 1/2 red pepper
Directions:

  1. Preheat the oven to 200 C.
  2. With a sharp knife, slice a pocket into the chicken breast and fill it with the cheese. Season the chicken with salt and pepper.
  3. Heat a spoon of olive oil in a frying pan (preferably oven proof), and add the chicken. Cook until golden brown, then turn and fry for about 2 minutes. When this is done, but the chicken (and the pan) into the oven and cook for 15 minutes.
  4. While the chicken is in the oven, cut up your vegetables into thin slices, put them in a bowl and add 2-3 spoons of olive oil, season with salt and pepper. Put them in a hot pan and cook for 5 minutes or until tender.
  5. Remove the chicken from the oven, add some goats´ cheese on top and put it back for 5 minutes or until cooked through.
