Clever Rapberry & Apple Crumble

The other day I had some friends over and needed a simple dessert that wasn't too heavy. I decided on an apple crumble, trying to do something fit for the season and different from the "regular apple cake". I already had a recipe ready and as I started chopping up my apples I realized that I didn't have enough fruit! Crisis! Panic! What to do?!
But lo and behold, I happened to have some frozen raspberries in my freezer and tada... Not only was the crisis averted, but it also made for a delicious twist on what could have been a slightly plain crumble.
A crumble is very easy to make, and although it does need to spend some time in the oven, think of all the nice or useful things you can do while waiting.

This recipe is for quite a large ovenproof dish, so I'd say for about 4-5 people.
Ingredients:

For the crumble
  • 300 g plain flour
  • a pinch of salt
  • 175 g brown sugar
  • 200 g cubed butter at room temperature (you can use either salted or unsalted)
  • sliced almonds for decoration (optional)
For the filling
  • 3-4 apples, peeled, quartered and cut into medium thick slices
  • 1 handful of raspberries (fresh or frozen)
  • 50 g brown sugar
  • a pinch of nutmeg (not necessary, but be careful if you use it, it has quite a strong taste)
  • a pinch of cinnamon
  • 1 tbs flour
Directions
  1. Preheat the oven to 180 C and grease your ovenproof dish with some butter.
  2. to make the crumble, put the sugar, flour and salt in a large bowl and mix well. Add in some butter cubes at a time and rub into the mix. I would recommend using a wooden spoon or even better, your clean hands to do the job. Keep adding the butter cubs until the mixture has the look of breadcrumbs.
  3. Place your fruits in a large bowl and sprinkle with the sugar, flour and spices. Mix together carefully.
  4. Evenly distribute the fruit in your dish and sprinkle the crumble mix on top. I only added the sliced almonds on top because I happened to have them in my cupboard.
  5. Put in oven for 40-45 minutes until the crumble is brown and fruit mixture is bubbling.
  6. Serve with custard, vanilla ice cream or vanilla sauce.

PS: A crumble can be made with all kinds of fruits and berries. Some other examples are pears, blueberries, peaches or apricots. Feel free to experiment and mix.
