Another easy and delicious mid-week dinner recipe.

Ingredients:
- 1 salmon fillet
- 100 g couscous
- 5 dl water
- 1/2 cube of vegetable stock
- 1/2 lime
- 1 tbsp olive oil
- 1 garlic clove (crushed)
- 3-4 sun-dried tomatoes
- fresh or dried herbs
- 1 sheet of baking paper or aluminum foil
Directions:
- Heat the water and blend out the stock. Add it to the couscous, together with the olive oil, lime juice and crushed garlic.
- Cover the couscous with cling film and let rest for about 10 minutes or until the liquid is absorbed. Fluff it up with a fork, add some herbs and season to taste.
- Preheat your oven to 210 C.
- Put the couscous on the sheet of baking paper, add the salmon on top and season. Cut up the dried tomatoes and add to the parcel. Fold the paper, leaving a bit of space between it and the paper. Twist at both ends.
- Cook for 15-20 minutes, depending on the size of the salmon fillet.
