It's been a while since I posted, but I haven't been feeling very inspired lately. I found this recipe a couple of weeks ago and it seemed so delicious. The only thins preventing me from making it was the lack of cardamom pods in the stores. I went to the shops again with high hopes, but no luck. I still decided to make this just because I lack patience. It still tasted delicious, and I can highly recommend it.

- 1 salmon fillet
- 1/2 box of coconut milk
- fresh ginger cut into small pieces
- 1/2 chili, rinsed and cut
- 1/2 red pepper, cut into thin slices
- 1 lime
- 1 garlic clove
- 2-3 peeled tomatoes
- sea salt
- (2-3 cardamom pods if you have)
- Preheat the oven to 180 C.
- Put the salmon in an ovenproof dish, add the tomatoes, ginger, garlic, chili and pepper.
- In a bowl, mix coconut milk, lime and salt. Gently pour around the salmon.
- Cover the dish with aluminum foil or a lid and let it cook for 40-50 minutes until the salmon is cooked through.
- Serve with rice.
