Savory Salmon in Coconut Milk

It's been a while since I posted, but I haven't been feeling very inspired lately. I found this recipe a couple of weeks ago and it seemed so delicious. The only thins preventing me from  making it was the lack of cardamom pods in the stores. I went to the shops again with high hopes, but no luck. I still decided to make this just because I lack patience. It still tasted delicious, and I can highly recommend it.

For 1 person.

Ingredients:
  • 1 salmon fillet
  • 1/2  box of coconut milk
  • fresh ginger cut into small pieces
  • 1/2 chili, rinsed and cut
  • 1/2 red pepper, cut into thin slices
  • 1 lime
  • 1 garlic clove
  • 2-3 peeled tomatoes
  • sea salt
  • (2-3 cardamom pods if you have)
Directions
  1.  Preheat the oven to 180 C.
  2. Put the salmon in an ovenproof dish, add the tomatoes, ginger, garlic, chili and pepper.
  3. In a bowl, mix coconut milk, lime and salt. Gently pour around the salmon.
  4. Cover the dish with aluminum foil or a lid and let it cook for 40-50 minutes until the salmon is cooked through.
  5. Serve with rice.
